    What = many options to choose from; which = limited options.

    If you were talking about, say, three languages earlier in the conversation about these words, it is better to use which language; otherwise, you use what language.

    They're in your mind. You haven't given the listener the options to choose from. Mind-reading is not Standard English communication.
    Hence, it's still 'what'.
