    Question much or many

If you want to ask someone of the amount of fruit you are supposed to buy, do you say: 'How much fruit should I buy?' or 'How many fruits...?'

You should use much in the context you have presented.

    Re: much or many

(I am not a teacher) You would say "How much fruit should I buy?"

"How much fruit should I take on my trip?"
"I would take a lot of fruit because it's going to be hot!"

However if you say "How many fruits should I buy?" you would be asking 'how many different kinds of fruit should I buy?' (This is not a common way to say it but it is technically correct.) Remember to eat your fruits and vegetables!
