    They are both correct. In "how fun" it's an adjective, in "what fun" it's a noun.

    "Oh, what fun it is to ride in a one-horse open sleigh."

    "But now that I’ve gone back to the book I realise how fun it is, how easy it is to understand..."

    Be careful though, 'fun' as an adjective is extremely informal. 'Fun' is usually a noun (uncountable), so 'how much fun' is a more usual useage.
