    What's the difference between:
    I've met the man I want to marry.
    and:I've met the man that I want to marry.

    This is the full grammatical stucture of the sentence, with the subordinate clause introduced by a conjuction ('that').
    The sentence is fully understandable if the conjunction is omitted, and in colloquial speech, we sometimes omit such words:
    I've met the man I want to marry.
