    I said:

    I was talking to x last day and he said ....

    is the expression "Last day" appropriate in this context?

    If you mean the day before today, say yesterday.

    We do say, "I was talking to him last night"
    and
    'last week' ,'last month, 'last year', 'last September', 'last Thursday'

    but not 'last day'.

    which expression would do the job instead of "last day" . I didn't mean yesterday, i meant "the last day I saw him"

    You would say 'the last time I saw him'.

    If you wanted to be specific about a day you could say 'The last time I saw him was Tuesday' or 'The last time I saw him was last Thursday evening'.

    Last day would be fine, but in a different context:

    I was talking to him on the (very) last day of his stay with us, and/when he said...

    Yes, but remember if you;
    "the other day" it implies 2/3/few days ago. Not weeks/months or years.
