If a writing test examiner ask, "Nowadays more and more people eat unhealthy diets and do not have enough exercises. What do you think of this?" what does him want to know? Is it the reason of that phenomenon or your judgement about that statement (true or false, good or bad, ...) or some other things?
In other words, what is the exact meaning of "what do you think of sth"?

predict the consequence of that phenomenon?
In fact, I'm wondering whether I have to regared that statement as a fact in my writing.

You have to give your opinion as to wether or not that YOU think this statement is true. Many people would argue to the contrary, but not I.

You shall have to do some in-depth research to answer this one though.
