    This dish represents the essence of tastes and colours of the sunny Southern Italy.


    I am not a teacher, I would wait for their advise.

    Why not:
    This dish is the essence of the tastes and xxx colours of xxx sunny Southern Italy.
    or
    This dish embodies the tastes and xxx colours of xxx sunny Southern Italy. (my choice)

    'represents' is such a drab word (and so most suited to, and suitable for, the windage of political discourse, not the culinary arts.)
