It's is not having an 'employer' (the one who pays your wages!) that people complain about - it's having someone they don't like ordering them around: their boss. A person might not object to working for an employer such as a large company...if they could be their own boss as they perform their work. Though, admittedly, when people have the fantasy, it's usually that they are the boss of the company!

It would be 'all' except that the word before the blank is the definite article 'the'.
We could say, "All of the people I work with love football", but not 'The all..."

'careful about' means that the person is anxious to protect something from harm or loss: "When he was interviewed by the police, he was careful about what he said so as not to incriminate himself."
'careful with' means that the person is prudent in the use of something, especially in spending/saving money.
It then depends on whether the sentence is meant to mean, (1) she spends her money wisely, or (2)that she is careful she doesn't lose her purse or perhaps takes precautions against pickpockets when overseas by wearing a money belt etc.
With your sentence, and without context, it really could be either!
