plates shift and the soft spot hardens

I am reading a book about baby massage. May I know what are the meanings of the phrases/words in red?

"We don't massage infants' head because their bones are still moving and growing as the plates shift and the soft spot hardens."

The cranium is made up of pieces, and there is one piece at the top, near the back of the head, that doesn't harden for several months after a baby's born. The pieces are called plates, and the soft spot must harden before the baby's skull is strong.

There are two "soft spots" - called the "fontanelle" - one of which does not harden until the infant is around two years old.
