All non-defining vocabulary is in a different colour.

Is 'vocabulary' here a countable noun or a uncountable noun?
Could you tell me the reason?

It's uncountable. The only time vocabulary is countable is when you are discussing sets of words: The vocabularies of Romance languages have many similarities.
