Why do we use the noun adventure instead of the adjective adventurous in following examples?

Many people go on an adventure sports vacation, especially during the summer months.

Adventure sports, like many other physical activities, offer health benefits.

Nouns are often used as adjectives: Dish soap, golf club, back injury, etc. The noun-as-adjective modifies the main noun as a type. In your example, the sports are not "adventurous" themselves, the sports are a type of sports.

Adventure sports are supposed to (theoretically) involve adventure. However, they are not always adventurous! Similarly, a hazard zone need not always be hazardous.
