If a person's name ends in the letter "s", would the possesive require an additional "s" after the apostraphe or do you only add the apostraphe? For example: I went to Doctor Simmons' office or I went to Doctor Simmons's office?

You can do either. It is an open question which is better. Some people prefer to omit the "s", others prefer to include it.
