Jimmy has spent as much time with Vinny as with Zoe!


I know I have to be aware of parallelism when writing structures like this one. Any other possible ways to express similar ideas?

That's fine. You could put he has between as and with if you wish, but it's not essential.

Jimmy has spent as much time with Vinny as Zoe would be potentially ambiguous. It could mean the same as your original sentence, but it could also mean Jimmy has spent as much time with Vinny as Zoe has.
