Sometimes, I'm not sure if I can omit the subject in sentences like the one below:

"As if sensing someone watching her, Rose swivels her eyes around".

Or it should be:

"As if she were sensing someone watching her, Rose swivels her eyes around".

Can I omit the subject as in the first one?

The first sentence is correct, but it isn't very natural, exept perhaps as a stage direction or similar.
The second could be something from literature if you changed "swivel" to "swiveled".
Neither is natural in normal discourse.
