I agree with TDOL's analysis, but unfortunately none of the sentences seems natural to me.

1-We are as good teachers as they are.

We (teachers) are as good as they are.
As teachers we are as good as they are.
We do just as good a job at teaching as they do.


2-We make as big cars as they do.

We make cars as big as theirs.
Our cars are as big as theirs.
