The hostess says, 'Yeah, and we also hear very amazing stories about other athletes that had difficult things happen in their life.'

However, there are two verbs ('had' and 'happen') in the sentence.
Why does she use 'happen' instead of 'happening'?
Is it grammatically wrong?

It's grammatically correct. In this context, "to have something happen" means "to experience/to sustain/to suffer".
