I decided to use this phrase when saying good-bye to my students (who are going to have their next class with me according to their timetable), just for a change. Will it be OK? Can it be used along with "Good-bye", "See you", "Bye" etc? Are they completely interchangeable?

Yes, it's possible. See here, definition #12.

It strikes me as rather informal, especially if you leave out "I'll".

It's OK but it is definitely informal and I wouldn't recommend leaving out "I'll" at the beginning. Unless your students are at an advanced level and you are teaching them colloquial English, I would stick to the more standard phrases.
