How do I say this correctly?
1. I'd like you to enclose some recent photos next time you write me.
Or
2. I'd like you to enclose some recent photos next time you write me.

or
2. I'd like you to enclose some recent photos next time you write to me.
...are both correct. It is mainly in America where they put the two together and come up with.."you write me."
As well, including 'the' before "next time" would not be incorrect, but would make it sound a little bit too formal for a friendly letter.
Since you are the writer, it is understood that the next time she replies it will be to you, so to say "write to me" is unnecessary, so (1) is better.
Also:
If this is to a friend or someone you're just getting to know. "I'd like you to.." is too 'authoritarian', a little bit like giving a mild order/directive to them. It would be better to phrase it,
" I hope you can enclose..
