I'd like to ask if I can write a phrase this way as part of a list in a table:

- interest in analyzing information, assessment and accurate data

The intended meaning is as follows: an employee should be interested in analyzing information, in assessment and in accurate data.

The intended meaning is as follows: an employee should be interested in analyzing information, in assessment and in accurate data.

I'm not a teacher, but I would say that not only is it possible to write it that way, but I would expect to see it that way in some situations. Specifically, the contracted version you offer is what would be normal in a job advertisement, and would be instantly understood by most native English readers.
