dear teachers, please explain, i'm itching to know this idiom's meaning. go from one extreme to the other

If you've ever had a place on your body that itched, you know that it annoys you until to pay attention to it (usually by scratching the itchy area). So if you're "itching to know" something, it means that the ignorance of this particular fact is going to annoy you until you find the answer.

To go from one extreme to another means, for example, to go from crying one's eyes out to laughing hysterically. Or from starving to eating so much that you feel like you're going to explode. Or experiencing such hot, dry weather for months on end that all the crops are dying to a sudden, torrential rain that lasts for days and threatens to flood the area. "One extreme to another" refers to polar opposites.

to itch = have a strong desire or urge to do something

"She is itching to start the project".

"I have itching ears." = I like gossips.

"Itching ears" is a Bible term that talks of someone who tries to impress other and draw them to themselves generally for the monetary enrichment of the teacher. They will teach what the people want to hear or what impress them to gain favor. The Apostle Paul in 2 Timothy talked of this and said of such to turn away.

"For the time will come when they will not endures sound doctrine, but after their own lusts shall they heap to themselves teachers, having itching ears."

Actually, your general point is right however "itching ears" refers to the seeker, not the teacher which is why the last comma in the KJV.

The Amplified version puts it.

"For the time is coming when (people) will not tolerate (endure) sound and wholesome instruction, but, having ears itching for something pleasing and gratifying, they will gather to themselves one teacher after another to a considerable number, chosen to satisfy their own liking and to foster the errors they hold."

It is a human tendency to select the path of less resistance. This comes into play when pastor says something that makes me uncomfortable. We're right with him when he is talking on issues that we don't struggle with, but when he turns toward our "glass house", look out!

This is about the same thing on principle as by the written from the honored Ouisch above.
