Are there any differences between these things? I'm guessing that, in the right context, they can all mean the same but I'm not quite sure.

There are significant differences between each word you have provided. I cannot think of any instance where 'they can all mean the same'.
Some of your posted words can only be used as a noun while others can be verbs. In this case, one size does not fit all.

I have never used "scallop" to mean a cut of meat. To me, scallop is seafood.

This seems to be another proof that you should not rely on online dictionaries. Dict.cc says (http://www.dict.cc/?s=schnitzel) that all these terms mean the same ("Schnitzel" in German) but according to your replies, that's not the case. It's not the first time that they completely fail. Shame on the authors of this dictionary. I hope that they will be punished hard someday. Millions of users rely on them but they often misguide us. Very disappointing.

The dictionary you linked to says that all those words can be translations for the German Schnitzel. The words marked "gastr." are cuisine-related and are, I think, possible translations. The others may all be possible translations without being synonyms.
