1) mkae dough's balls or make balls from the dough
2) I am rolling the dough's ball

Generally, we just call them "dough balls". They are balls made of dough, so we just reverse it to "dough balls".

It's like "houses made of stone" are called "stone houses".

So sentence 1 would be "Make some dough balls"
