The Kindle comes in many different models. There are seven as of today. Each one offers more advanced, unique features, and of course, is priced differently.
I have to questions:

1) Does "as of" mean "as ofused to indicate the time or date when something begins"?
As of today : From past untill today.

"As of today" is one of those pointless phrases that gets used a lot. It simply means "today".

Today/At the moment/Right now, seven Kindle models are available.

I've found that it's worse than pointless; it's ambiguous, because it's not always used the same way.
"We've raised $3,000 as of last Tuesday. "As of" means "in the interval between last Tuesday and now". The sentence could also mean "Last Tuesday we had $3,000."
"As of today, we are going to use a new rule." This has a third meaning - "starting today", not 'today'.

Is this OK too? I want to avoid using "models".

It depends. Generations doesn't mean models. In any generation, there are likely to be several models, and older generations are probably no longer sold.

Is there some reason you need to break this into two sentences? The same information can be delivered with:

Today, there are seven models/generations of Kindle available.
