"Educational games are ones/those that teach you as well as amuse you."
Is the following correct too?

Educational games are ones/those that teach you as well as amusing you.

I found the example above in the Oxford dictionary as an example:

The sentence you quoted is not on the linked page. It says "connected with education; providing education.... educational games/toys (= that teach you something as well as amusing you)".

Sorry, I can't figure out their differences. (My sentence and one in the Oxford).

Yours is a sentence which I guess you constructed by filling in words that seemed to be missing from the dictionary entry.

Here they are together; first yours, then Cambridge's:

Educational games are ones/those that teach you as well as amuse you.
educational games/toys (= that teach you something as well as amusing you)

Cambridge meant something like "Educational games or toys; i.e., games that teach you something as well as amusing you."

I think your sentence was OK with "those", by the way.

Neither can I. I would say the Oxford entry is carelessly written.
