"Every" vs "all"

Hi there, Can anyone please tell me whether I should use "all" or "every" in the following sentences?

  1. 1- Geography is the mother of all/every subjects/subject.

    2- In football there are many teams that are rivals to one another, but Real Madrid versus Barcelona is the mother of all/every battles/battle.

And as usual please correct my writing too. :)

The natural phrase is "the mother of all + plural noun".
