Let's go drinking.

As far as I understand it means a series of drinking, right? It's kind of "Let's go on a drinking spree". Can it mean just one go of drinking.

- I am thirsty. Let's go (to/and) drink something. (OK)

- I am thirsty. Let's go drinking. (Sounds like an alcoholic's appeal)

People don't usually "go drinking" because they are thirsty. They do that to have fun.
