The word is diagraph.

Example
gray
ay is a vowel diagraph.

A vowel diagraph is when two vowels are put together to form a new sound (ea, ai, oi, oy, ow, ew, and more).

A consonant diagraph is when two consonants are put together to form a new sound (ch, th, and more)
