1. I'm opening a door to a walkway(in a building). A person has just come to the door from the opposite side. He's in kind of a hurry, wants to walk through first, and says "Excuse me".

2. I'm in a store, and considering something on the shelf to buy. Another customer near me steps forward, wants to pick up something on the shelf in front of me, and says ''Excuse me''.

What are the appropriate responses in these scenarios?

I do not think you have to say anything in such scenarios. Just give way to the person or say "OK" if you wish.

Can I say "yeah" or "yes" instead of "Ok" ?

If you're standing there looking at stuff on a store shelf and someone says "excuse me" to get past you to an item that he wants, then you can say "sorry."

Apologising when you've done nothing wrong is a very British thing to do!
