Jack, they mean very little (no one pays so much attention to the method he uses to ingest a meal), but (1) is grammatically correct, while (2) is wrong. 'Way how' should be 'way that'-- and that is the same 'that' that has been elided from your first sentence: 'I like the way (that) I eat my chicken salad'.
In addition,
that functions as a conjunction: It tells us a clause will follow:
EX: I like the way that you eat.
that is often omitted when it functions as a conjunction:
EX: I like the way you eat.

I like how you eat ~ I like the way you eat.
'how' is synonymous with 'the way'
