is this sentence correct ?

'I don't think that I will ever forget the cake my friend had bought' ?

why not ......... has bought' ?

it is written by an IELTS teacher from USA

Yes, it's correct- the cake was bought at a time in the past- has bought would refer to a cake that is there now.
