Is the following sentence correct?
* Yo cook the rest, I will cook the sushi.
I saw the sentence write somewhere on the internate. Is it correct to use the definite article before a dish.

Prepare the sushi would work better as the fish is mostly raw. The article works here as we're talking about sushi for a specific meal.

Can't I say the sentence without adding the definite article before sushi?

No, you need "the".
To quote an example sentence, you should not use an asterisk. In linguistics and grammar, this means you are indicating that the sentence is incorrect. Your sentence is also a run-on; you can't join two sentences with a comma.

The whole thing seems to be the wrong way round. We usually start with something specific and then talk about the remainder.

"I'll prepare the sushi. You cook the rest."

I suppose it depends on your definition. I'm vegan so I eat vegetarian sushi - it's usually seaweed wrapped around rice and vegetables. The rice definitely needs cooking!

Given that the main ingredient is raw, at least for non-vegans, boiling the rice does not seem like the central item. Claiming to cook a food that is based around mostly uncooked fish seems to be a sideshow to me. I could serve a casserole with a side salad, but I wouldn't call it an uncooked meal.
