Imagine I have a stain of cake-icing on my jacket.
You ask me what it is.
Which of these answers are acceptable?
1-That is icing of a cake.
2-That's the icing of a cake.
3-That's icing of cake.

I'd simply say "That's icing." However, out of your examples, #2 is the best for me. :)

I personally would use none of those, but would say simply
1. it's icing.
2. It's icing from a cake.

I am also thinking of the rule "this" is for close and "that" is for further away. therefore I just think "it" sounds better. Just an opinion from a fellow learner.
