'in the wake of your mail' doesn't work, at least in British English IMO.
I agree. "In the wake of..." doesn't seem at all appropriate here. Usually something happens in the wake of another happening (In the wake of the latest earthquake, thousands of people have been left homeless)
I would say:
In response to your email of [date], I would like to discuss...
In light of your recent email, I would like to discuss...
Further to your recent email, I want to discuss...
