I would not use the word "assimilated" in either of those examples. Assimilated means sort of reluctantly being part of something. I think Indians are as obsessed about cricket as much as Canadians are obsessed about hockey.
I might use the word "embraced" for either example. It means in this context that not only was the object adopted, but also that the object was adopted with enthusiasm.
"Indians embraced cricket"
"Carter embraced the Muslim religion (faith)"
