Capitalize first letter after each full stop.
Next weekend? Sure? (Did you want the "sure" to be a question?)
Yes, I already told you that. (Don't need "had". Full stop at end.)
I knew you were coming but I didn't realize it was that soon!
When did you think it was? ("then" not needed.)

I would prefer 'I'm visiting you next weekend' since the dialogue implies that the speaker has already arranged to visit the other person.

according to my grammar, I should use I'll when the action is not planned and I'm when it is.
I have seen a lot of sentences that simply do not follow this rule.

I think your original sentence "I will visit you next weekend" is quite usable. It can also be "I will be visiting you next weekend" as well as "I am visiting you next weekend".

Which is best rather depends on your context and what is the understood situation.
