1) That experience made me a poet.
2) That experience made me into a poet.
3) That experience turned me into a poet.

Are there any differences between the meanings of those sentences?
If yes, what are they?

I feel a difference, but can't put my finger on it. I think '1' implies that my will didn't play a part in my becoming a poet. I just ended up being a poet because of it. The other two mean the same. It seems that I somehow welcomed the change.

I think your interpretation is correct. I did not like the first sentence until I read your thoughts on it. Then I thought to myself... yes, in the right context it could well be as you describe it.

Context is important though for that first sentence.
