Am I mistaken or names for some animal species in English are differentated according to sex of an animal and some are not, (mare and stallion but only male cat and female cat) Why is that? Intuition would tell me that the first group received special names thanks to their importance for humans (domestication, hunting). Do you know of any pages or books where I could find more about it?

Here are some:
(buck, hind, stag) / doe
(rooster [am], cock [br]) / hen
boar/sow
bull/cow
dog/bitch
lion/lioness
ram/ewe
stallion/mare
tiger/tigress

"tom" is used for a male cat, but I don't think there's a corresponding female version.
