The second one. Meet with, meaning “to encounter” or “to experience”, is used in expressions like “meet with stiff opposition”.

Which one sounds better?

As Nehushtan said, the second is better. We do use "meet with" to mean "to encounter" but I prefer "to meet". You can also say "I would like to have met such a man".
