I'm not sure what you mean by 'moderator'. If you mean 'modifier', a word that changes the meaning of another in some way, there are a number of types:
Determiner- these are words that restrict the meaning by number, or making something specific, ect
Adjectives- these are words that change the meaning of a noun, like 'blue' or 'expensive'.
Adverbs- these are words that change the meaning of verbs, adjectives, other adverbs and sentences.
Nouns as adjectives- these are nouns modifying another nouns, like an adjective.

Is this what you were looking for?

In your examples, 'very' and 'quite' are adverbs. ;-)

I think I found the word that poster is looking for (thanks to MNY). It's intensifiers.

For the name of the terms in question, try this.

"adverbs of degree" (Fruz & TDOL)

'NOT SO', as in 'not so good' would be an adverbial of degree. ;-)
