What is the meaning of "new york" here?

I searched here
Cook's Thesaurus: Beef Loin Cuts
and they say "new york steak" = sirloin steak" and since "sirlons come right next to "new york" in the above sentence. Can you kindly tell me the main difference between "new york" and" siloins"?
