Question:
If I completed a maths degree, which sentence is correct?

Sentence1:
I hope I can find a job which my excellent numerate skills and analytical mind will be most of use.
Sentence2:
I hope I can find a job which my excellent numeracy skills and analytical mind will be most of use.

As far as the use of the highlighted word is concerned, sentence 2 is correct. You have numeracy skills and therefore you are numerate.

However, the sentence itself is not completely correct. I would suggest:

I hope I can find a job IN WHICH (or simply WHERE) my excellent numeracy skills and analytical mind will be best used (or OF MOST USE).
