[Grammar] omitting be+noun phrase

We met the man.He is a professional chess player
We met the man who is a professional chess player
We met the man that is a professional chess player

1-) Question: We can't reduce this sentence like in 'We met the man a professional chess player', can we?
2-) Question: We cannot reduce any sentence we want just seeing it has the structure 'be+noun phrase'.We should decide to reduce the relative sentence or not according to its meaning and naturality, right?
3-) We can say the reason why we cannot reduce this sentence is that 'it sounds unnatural', right?
