Chef : we'll do filet mignon.
sou-chef: It doesn't look like a steak.
Chef : really?
Sou-chef: My mother always orders that.
Chef : Oh my God!

They both laugh

I don't see why they are laughing! What is the meaning of "order" here???

Thanks a lot.

To order something (food/drink) - to request something to eat/drink. Note that it doesn't have to be in a restaurant - it is what you do in a café, a bar or at a takeaway/delivery fast food place.

The sou-chef's mother, when she goes to a restaurant, always asks the waiter for filet mignon. I'm not sure why the chef said "Oh my god" or why this would be funny though. Perhaps it's funny to chefs!

At an Italian restaurant, I always order risotto.
Most people order a drink before they order their food.
We ordered six pizzas but we couldn't eat them all!
