I am wondering if my sentences are grammatically correct.

Peter opened the beer bottle and drank in large swallows. When he had drained it, he thumped it on the table and pulled another one out of the crate beside him. He opened it, raised it, and then drained it as he did with the first one. He drank as if he were suffering from unquenchable thirst.

I have no problem with "as he did with the first one". Draining it is what he did.
I'd probably use "an unquenchable thirst".

How about gulps instead of swallows?
