I'm Spanish and I have no idea why we don't capitalize the days of the week or months. I guess it's not necessary.
Maybe I could ask:
Why do you capitalize the days of the week or months of the year in English?

Here's an equally inquisitive question for you, too:

Why is it that you don't use capitalization at all?????

As for Spanish, it's not only days of the weeks and months of the year; they also use lowercase for the names of countries, names of nationalities, names of races, product names, etc, etc.

In German, for instance, there are many, many more words that are capitalized than there are in English.

In English, it's because of proper names are to be capitalized. People, certain places, and certain things.
