Should I use "in" or "at" when this preposition is in front of a university?
Such as :
a library at / in the University
I major in English literature at / in National Taiwan University
I am a student studying at / in your university

I would use "at" for your examples. This "at" gives the meaning of "being part of" the university".

I would use "at" for your examples. This "at" gives the meaning of "being part of" the university".

One could say there is a library "in" the university, but "at" would be more common. It would be more common to say there is a library in (a certain building). The problem with "university" is that it describes a large entity, usually with multiple buildings, and sometimes with multiple campuses. It is often difficult to conceptualize an "in" in that situation.
