1. react suddenly very angrily
2. react suddenly and very angrily
3. suddenly react very angrily

Are all of them correct grammatically, and idiomatically too?

2 & 3 are OK.
It is better that you post the sentence.

I don't think you need "suddenly" there. Say:

When a stranger touched his new car he reacted very angrily.

If you must use "suddenly", both 2 and 3 work for me.
