Can I say as follows?

We went to Grand Canyon and saw beautiful landscape. Especially the rising of the sun was the best landscape I had ever seen.

The sun rising is not a landscape. A landscape is a view of the land.

"The sun rising over the Canyon made it the most exciting view I have ever seen".

We went to Grand Canyon and saw beautiful scenery, especially the rising sun. It was the best sunrise I had ever seen.

No.

Oddly we do say "look at OR saw the beautiful scenery", but "look at OR saw a beautiful view/scene".
