Since Mr Jones resigned from his former company, he has/had found more time to rest and recover from his exhaustion.

Due to 'since' and 'resigned', I think I should use 'had' found instead of 'has' found. Please correct me.

No. This is a typical use of the present perfect. We have a point in the past ("resigned") marked by "since", and the present perfect denoting that "has had/has found" continue up to the present moment.
