In the following sentence: "archaeological, ethnological, and anthropological evidence points in the direction..." is it correct to use the singular verb "points"?

In this sentence I personally would prefer to use a plural form. Although 'evidence'is uncountable we have a list of three different types of evidence.

Yes, evidence is singular so we use the singular form of the verb even though the sentence mentions three types of evidence.
